The BOMBAY SAPPHIRE® Collins is a refreshing, light cocktail that complements and enhances the Spanish lemon peel, just one of the 10 exotic botanicals sourced from around the world found in BOMBAY SAPPHIRE. INGREDIENTS (for 1 BOMBAY SAPPHIRE Collins): - 1.5 measures of BOMBAY SAPPHIRE Gin - Freshly squeezed juice of ½ large lemon (or 1 small lemon) - 2 heaped tsps caster (superfine) sugar - Soda water GLASS: Highball or long glass METHOD: Add the lemon juice and sugar to the glass and stir until the sugar is dissolved. Add BOMBAY SAPPHIRE. Fill the glass with ice, stir at least 5 turns to chill the liquid, then add more ice to replace any that melts. Top up with soda water and stir all the liquid carefully through the ice. Garnish with 1 lemon wedge and 2 straws. Serve immediately. OPTION: If you are feeling a little more adventurous, muddle blueberries in the glass with the lemon juice and sugar before adding the other ingredients to create a BOMBAY SAPPHIRE Blueberry Collins.
