    Easy side:

    JELLO SALAD:

    1 small tub coolwhip
1 lg. tub (1lb.) cottage cheese
1 small pkg. jello ( I use cherry or lime)
1 tin drained fruit cocktail (mixed fruit)

Mix all together and refrigerate for several hours

    SALAD:

    1 cup sour cream
    red and green cherries (maraschino)
    1/2 cup coconut
1 tin well drained mandarin oranges
1 tin well drained crushed pineapple
    1 tsp. honey
1 small pkg. coloured miniature marshmallows
    1 tsp. almond extract

    Blend well and refrigerate.

    CRUNCHY BROCCOLI CHEDDAR SALAD

    1/3 cup plain yogurt
    1/3 cup mayo
    2 tbsp. lemon juice
    1/2 tsp paprika
    salt and pepper to taste
    3 cups broccoli florrets
    11/2 cups chicken ****** strips
1/3 cup thinly sliced red onion
    1 1/2 cups cherry tomatoes-halved
    1 cup grated cheddar cheese

    Mix yogurt,mayo,lemon juice,paprika,salt and pepper
    Add remaining ingredients
Stir well and let stand a few mins. before serving

For variety use cauliflower or use an equal amount of both.

Hope this has helped you out.

You can make granitas or fruit smoothies. Here’s an easy granita recipe. You could also put things like strawberries, blueberries, and yogurt together in a blender to make a smoothie. Good luck.

    Pineapple Granita

    1 Cup Pineapple, Chopped
    1/4 Cup Orange Juice
    1 1/2 Cups Ice
Puree pineapple and orange juice in a blender. Add ice and blend until smooth. Use immediately or store in the freezer. For later use, remove from freezer and let thaw until soft enough to break up with a fork. Serves one.
