Tomorrow me and my mom are having a picnic. I am doing a BLT sandwich with some lettuce, bacon, mayo, and avocado. Anyway, what are some other dishes we can have for two people? Also, what are some “mocktails” (non-acholic cocktails), or some summer freshing drinks we can have. Include the recipes everyone! Thanks so much! :)

Sounds like you’ll come back with a basket full of good memories….. :)

I would suggest some nice bread, rolls or french loaf and some cheeses - like feta and edam and the like. or crackers, if you’ve already got sammies.
Maybe some ham / chicken / hot beef as well.
grapes - they’re always good in picnics

Good drinks are lemon, lime and bitters . . . very refreshing

Chips are a great side with sandwiches. And for a drink lemonade would be great for a picnic.

A great website for any kind of cooking is:

Rachel Ray has fun ideas & Sandra Lee.

    Coleslaw

You need cabbage, carrots and mayonaisse. Shred or use a food processor to mix all of the ingredients. Add sugar and black pepper to taste. Make sure you store on ice in a cooler to keep it from spoiling.

    Fruit tray

All of your favorite fruits cut up in a bowl or platter.

    Virgin Daquiris

Bacardi mixer frozen in a can. Limeade frozen in a can. Mix both cans together and add water and ice in blender or pitcher. Stir or blend according. Add a couple of lemon slices for a little zip.

Maybe some egg salad, fruit salad, macaroni salad?

That’s a lot of salad. For dessert I would bring fresh strawberries with whipped cream or something equally yummy.

for a super easy mocktail go to the store and pick up a “bacardi blender” in the frozen juice section. theres instructions on the can making a “virgin” daquiri with fresh or frozen fruit. I also like cherry limeade. Combine limeade with cherry grandine to taste. you can garnish with fresh lime slices and marachino cherries. For easy sides try “suddenly salad” I’d recommend an italian or mediterranean flavor, fresh veggies and dip and bakery cookies. Pineapple is in season and can easily be sliced for a healthier sweet treat.

Well you’ve got Avocado, so try guacamole dip (I like to ad lemon and garlic with a touch of salsa) with Ritz crackers. You can also ad some cheeses and as far as the drinks go, look here

    Potato Salad
Cook like 6 potatoes with the skins on.
Cook about 4 eggs, hard boiled.
Peel the potatoes and eggs when cool.
Cut them all up in a bowl.
Add 1/2 of a sweet onion if you like onion, chopped.
One or two ribs of celery chopped up fine.
    One cup of mayonnaise.
Some salt, pepper and parsley to taste.
    Mix it all up gently.
You may have to add more mayonnaise to make it more creamy if you like.
Or you could add half sour cream instead of some of the mayo.
This is the only way I like potato salad.

For drinks I would fix iced tea. If you make it with different kinds of herb tea you can get some really good tasting tea. Try about 3 regular tea bags and a couple peach flavored tea bags per 1/2 gallon of water.
I put the teabags in a drip coffee pot and run the water through the coffee maker without the coffee. The tea bags will steep in the hot water and be quite strong. Then take a half gallon pitcher, pour it about 1/4 full of cold water and add the cooled off tea, then fill up the pitcher with cold water or ice.

Potato salad, coleslaw, or chips would be a good accompaniment. Iced tea or lemonade might be nice, too.
